First things first: I think this is an awesome project - thanks for creating it!
I fancied being able to generate Elixir structs and types so I had a go at creating a code generator based on the Haskell one. It's definitely not polished, but I'm creating a draft PR here for visibility and to avoid duplication of effort if anybody else is thinking of an Elixir code emitter. It already generates usable Elixir, though, at least from the JSON examples I've thrown at it.
