Extend JDK11 support date to Oct 2025 (to match OpenJDK)

Per The OpenJDK release matrix, https://www.java.com/releases/matrix/, JDK 11.0.29 is expected to be released in October of 2025

Description of change

Updated the "End of Availability" date for JDK 11, based on dates published on the OpenJDK website.

The PMC discussed this in todays call. Whilst the PMC supports the extension of the Temurin 11 support to match that of upstream OpenJDK, the link provided (https://www.java.com/releases/matrix/) refers to Oracle JDK (not OpenJDK).

We will be checking with the OpenJDK updates project to determine whether there is a plan in place to maintain the jdk11u source to October 2025

@gregparam talking to the JDK11u maintainers they are suggesting that it may be supported up to 2027 so long as the patches are only security fixes. I'm getting some official clarification here and then we'll update the website.

@gregparam we're still having discussions around this but 2027 is looking to be the expected end of support date
