Handle Poetry v2 Style Configs

Poetry just release its v2 with a large amount of changes that will likely break the migrations https://github.com/python-poetry/poetry/releases/tag/2.0.0 this needs to be handled or to be checked for.

most changes are going to be focused around checking the [project] section that uv also uses for fields in addition to the [tool.poetry] sections to support pre/post 2.0 projects.
