OwnTone selects ALAC for daap streaming because it thinks the client is an Airplay speaker:

[2024-09-29 17:58:34] [DEBUG] daap: Speaker check of 'Music/1.5 (Macintosh; OS X 15.0) AppleWebKit/619.1.26.31.6 build/174 (dt:1)' (codecs '(null)') returned 10

Regression in 28.10 coming from PR #1698
