is there any clean way to choose apache/mod_php5 instead of nginx / fpm?
This would be great, since some existing projects are heavily based on that kind of setup.

Not yet, this (and #14) is high priority currently and @fpletz at least had plans to start work on those.

ftr: we should definately use puppetlabs/apache for this, since it's one of the officially supported modules and even patched by us to work with apache on SLES11SP1
