Is your feature request related to a problem? Please describe.

We use a dependency to quarkus extension https://quarkus-resteasy-reactive-jackson/ to serialize objects to JSON in the service and the conversion service.
The extension page states that a newer version is available as https://quarkus-rest-jackson/

We should probably upgrade eventually
